If you don't care about the digital extras, just get the regular edition.  I bought the special edition and didn't even get around to redeeming the summon materia until late in the game.  I wasn't impressed with Cactuar, maybe he's only useful early on or something.  Don't even remember anything about Carbuncle.

I'm guessing the artbook and soundtrack aren't substantial, then?

I didn't even get around to looking at those.  I ended up buying the full length soundtrack though, so I'm even less likely to pay much attention to the abridged one bundled with the game.
