I'm curious as to what type of TV you are using?  I think all of those systems support HD, do they not?  I wonder whether it is worth investing in a TV that can spit out 1080i (I think that's the number?) Thoughts?  Has anyone seen any of those systems on a high-def TV, and if so how does it look?

Wii does not support HD.  It only supports up to 480p (aka EDTV).  1080p is the number you are looking for.  PS3 supports this out of the box and X360 can be updated via firmware to support, though I don't think any 360 games use it yet.

If you want to see either 360 or PS3 running in HD, just head to your local gamestore.  I don't know what setting they have them set at, but 720p would be my guess.

As for me, I'm still using a regular old Tube TV, so my Wii is running in 480i over boring composite cables, just like every system before it.  Right now, I plan to get a 1080p HDTV no earlier than when MGS4 comes out.

I'm using a flat-screen CRT TV. Not sure what its specs are, but it's definitely not HD-capable.
