After Castlevania and Devil May Cry, I'm really interested in getting into more gothic music.
Y'know, stuff with lots of organ, harpsichord, chorus, aria, etc.
Any recommendations?!

I can't think of any VGM that fits the bill, but you should Alfred Schnittke's Requiem.
It's not a soundtrack, but there's "Gothic Neclord" from Suikoden 2.
Nothing beats Chaos Legion in this regard. You should definitely check that soundtrack out.

There's at least more than one album/soundtrack out there entitled Baroque; can you specifiy which one specifically you're talking about, namely catalogue number?

Well, considering that I recently made a thread about it, it seems only natural to mention Demon's Crest here. It's totally gothic.

I think I already mentioned it in a different topic recently, but Demon's Crest/Quest on SNES is fantastic.
Sweet Home Arrange is pretty good if you can find it, but it's only 28 minutes long.
The Legacy of Kain series has lots of gothic sounds, especially the first Blood Omen soundtrack from 1996. Other good ones are Chris Vrenna's American McGee's Alice (which also happens to be one of the best soundtracks in existence), and Steve Henifin's Eternal Darkness score (Henifin also composed Blood Omen 1, mentioned above... a pattern?). There are some nice gothic-sounding compositions in Shin Megami Tensei III: Nocturne, especially on the additional "Maniacs Soundtrack Extra Version" CD, but the SMT3 soundtrack isn't gothic in overall tone, more rocking, really.
