Requiem For the Gods from SotN has always been my favorite. The Have Mercy track from the scrapped Dreamcast CV is also good. My tendencies are more toward a soft haunting piece than the throaty thunder of say, God of War or Ace Combat.
I wonder if mentioning Ace Combat music in this thread is really a predictable manner, although it's must based on the OP. Mentioning Shoji Meguro can be equally predictable though.
Second "Requiem For the Gods" from SotN, will add Xenogears "Ship of Regret and Sleep."
There are more but I can't think them at the moment.

Seriously, though, I love "Liberi Fatali".

Most of mine are either in classical music (Brahms' German Requiem) or film music.
In videogame music, I'd have to go with the popular vote, Liberi Fatali.
Besides the classics mentioned so far, I'd add:
"Hero's Theme" (Kameo)
"Shoreless Ocean" (Age of Pirates: Caribbean Tales)
"Intro Movie: Seasons of War" (World of Warcraft)
"Menu" (Apocalyptica)

If you are also including songs that feature choir, but not necessarily in entirety, I recommend:
-schwarzweiß ~Worlds Connected Beyond the Mist~ from Atelier Iris 3 (the full version is a must. Not the version on the OST)
-World Destruction Main Theme (it's not epic, but some beautiful choir work)
-Communication Breakdown (Xenosaga II)
-Promised Pain (Xenosaga III)
I've been watching some Guin Saga anime and the ending theme for the show is loads of win - Kanon singing Saga ~This is My Road~.
I like Mitsuda's "The Resurrection" from Xenosaga.
Nice topic but I don't see the need in limiting them to "epic" since that was done in a previous thread.
Game music:
-Metal Gear Solid 4 OST ("Mobs Alive") - The chorus is fairly subdued but it tops off the climactic confrontation perfectly.
-Symphonic Shades ("X-Out") - Sublimely mysterious yet uplifting.
-Wanda and the Colossus OST ("Prologue ~To the Ancient Land~") - Several other tracks with excellent choral work here, even if the chorus rarely takes the spotlight.
Anime music:
-Akira OST ("Kaneda", "Tetsuo", "Requiem") - Almost avant-garde but some unforgettable choral work on here.
Film music:
-Conan the Barbarian ("Riddle of Steel / Riders of Doom") - Also of Zelda trailer fame.
-First Knight ("Arthur's Farewell") - Sorry but this puts One-Winged Angel and just about every other epic choral battle theme to shame.
-LotR Fellowship of the Ring ("The Bridge of Khazad Dum") - Chills. Lots of powerful chorals throughout the series.
These are more about solo vocals but still have a choral feel to me:
-Dracula X ~Nocturne in the Moonlight~ OST ("Prayer") - Haunting and beautiful.
-Panzer Dragoon RPG Memorial Album ("Sona mi areru ec sancitu") - Such a powerful combination of orchestra with "Panzerese" vocals.
-Panzer Dragoon Orta OST ("Anu Orta Veniya") - Ditto.
And yes, FFVIII OST's "Liberi Fatali" is still up there with the best.

Oooh, yes. That one is a doozy. Goldsmith didn't use a chorus terribly often but when he did, instant goosebumps.
Also, his work on the Omen Trilogy.
John Williams also wrote very well for the chorus. Dual of the Fates, if you stick with epic battle music but plenty of more ethereal stuff as well (like select cues from "Hook").
Verdi is a choral master. I was listening to "La Forza del Destino" the other day and yowza...
Seeing some non-VGM pop up, but no mention of my favorite yet: Neodammerung from The Matrix Revolutions.
"The Battle for Everyone's Souls" (Persona 3). Even though I think it isn't exactly choral.
I don't actually have anything new to add, but I would like to emphasize how good these are:
- Requiem of the Gods
- Liberi Fatali
- One Winged Angel
- Kameo OST
- Wanda and the Colossus
people already mentioned Symphony of the Night, One Winged Angel, Xenogears and Xenosaga, so all I can add is Scene I from Final Fantasy Symphonic Suite. I have others but they are mostly classical such as the end of Beethoven's 9th symphony.

I must respectfully dissent about Liberi Fatali. I love epic choral tracks, but Liberi Fatali goes overboard in trying to sound big and epic. It gives me the feeling of being smacked repeatedly in the face with a frozen fish.
Recently I've been playing the new(ish) Alone in the Dark (not recommended... unless you have a group of people watching you who can laugh at and appreciate it purely for how awful it is) and I'm pretty impressed by the choral stuff in it. Great stuff there, though it's not integrated very well into the game at all in most cases.
Also I've gotten rather sick of One Winged Angel over the years - still love Liberi Fatale, and while we're talking Uematsu, I think "The Seal is Broken" from Blue Dragon is one of his best (and it never ever EVER gets mentioned):
Yeah, "The Seal is Broken" is awesome sauce. I'm also particularly fond of "Howl of the Departed" from Lost Odyssey. It's got choir that you are looking for, some awesome synth/rock, and one of the craziest additions from Uematsu yet, Japanese spoken word, but in a very unexpected way. It makes it sound really dark.
You want choruses? Check out the Ar-Tonelico Hymnos albums. They're ENTIRELY CHORUS the whole way through!...with other supporting instruments, as well. Have that stuff blasting from your car stereo, and everyone will think the Saints are marchin' in!
