Up until now, I've had one of those old, big-honkin' clunky cathode ray tube television sets. And I'm finding out it's not going to be fun to have to move the damn thing next place I move into, because it's so damn big and heavy, and liable to easily break during transit.

So I'm looking into flat screen TVs, something that's...

(1) Brand Name, like Sony, Samsung, something reputable.
(2) Somewhere within a price range between $200 and $600.
(3) Something with enough AV jacks to hookup at least 2 AV peripherals (game consoles, DVD player, VCR, etc.) simultaneously (because having to switch cables everytime I want to use a different peripheral becomes tedious).
(4) Something with an audio-out jack, so I can hook my wireless headphones receiver to it.
(5) Nothing less than 16-Inch Screen, nothing more than 26-Inch Screen.

Granted, I've been browsing around Best Buy, Target, and Wal-Mart, but I'm trying to do as much research as I can before I settle.

Any recommendations? Even if they only fit one of those categories? Or perhaps you'd just like to give me your own personal recommendation?

You seem to be pretty specific in what you want for inputs, so I'd say find out what's available to you that has what you want in that first and foremost (you'll be kicking yourself later if you don't).  Then see what the price is and ask yourself where you're willing to settle in terms of size of TV.  I don't know if you trust reviews from sites like CNET at all, but they can be an indicator of what you're thinking of buying maybe an ok choice versus a bad choice but don't use it as an absolute.  Plus definitely be aware that what you see in the store isn't what you're going to see at home. 

I'm a Sony man myself, but that's not for everyone.  =p  must be the japanese in me heh.

LOVE my Panasonic plasma.  It's a 42" and old games look better on it than equivalent LCDs some of my friends have.  I got it over a year ago and it was $820 through a slickdeals code at CC (normally $1300), but I don't know how much they run now.  Highly recommend the brand, though (had read tons of great things about Panasonic's sets for gaming, specifically, before I got it).

You probably don't need to have an audio-out jack unless you intend to listen to broadcast TV with the receiver (or you don't have separate speakers).  If you have cable, sattelite, a DVD player, game console, etc., you can route the audio signal straight into the receiver.

If you get a Samsung television, keep in mind that it might not have any S-Video inputs (especially sucks if you're going to hook up a SNES to it).

Samsung seems to favor Composite over S-Video for some bizarre reason.

On the plus side though, their televisions usually come with SRS 'Virtual Surround' processors built in.

SRS isn't exactly new technology, but they have been tweaking and enhancing it over the years. Even if you already have a multi-speaker audio setup in your living room, it can still broaden the sound field and make the listening experience even more immersive.
