Smooth McGroove's acapella videos are pretty good.
Love Smooth McGroove! His Guile's theme always perks me up.
This is pretty shameless but I've done some pretty solid VGM piano performances (among a few other things). I'm not very popular, alas.

I don't think I've actually posted my work before so you didn't miss it.
My favorite channel for ongoing VGM is Supradarky's. He has great taste.
Square Enix's channel posts material quite a bit. They do advertise their soundtracks for sale with lots of clips.
McQueen8601 covers game tracks using the sound engines of hardware other than what their games were designed for, often CPS2.

While I think illegal downloading ultimately contributes to VGM, I recently feel guilty for watching youtube without adblock or any equivalent. I mean, if you upload a soundtrack of a big title, you'll get tons of $$$. Pretty disgusting.
